Kappa-Casein Update

A decade ago, there seemed to be a great of interest in the Kappa-Casein profile of AI bulls. That interest seems to have waned in recent years, however, as payment systems around the world rarely reward producers for their Kappa-Casein selection efforts. Still, there are increasing numbers of vertically integrated dairy operations today that turn their own milk into cheese. For these dairies it might be of interest to know about bulls carrying the AB and especially BB Kappa-Casein profile.

The majority of Holstein bulls carry an AA profile which is least desireable from a cheese making standpoint. There are quite a number of bulls with the AB genotype which does yield slightly more cheese per pound of protein produced. Bulls with the BB profile are relatively unique and pass the “B” gene for Kappa-Casein on to every daughter. Of course if the B gene is also passed on from the dam, the resulting female will also be “BB” generating a milk product most desirable from a cheese making stand point.
